About this course

As gastronome Jean Anthelme Brillat-Savarin famously put it, "Tell me what you eat and I will tell you who you are." Yet in America, culinary practices are politically intertwined with the discourses of immigration, nation building, and racial ideologies, which have collectively shaped the experiences of racial others. This course focuses on the experience of Asian American communities, exploring how their identity formation and relations to power are negotiated through the production, service, and consumption of food. Students will learn about both the roles of food for disciplining racial others and the abilities of communities to claim agency through their culinary practices.
